For as long as I can remember my mom has made a salad along side of every family meal. It has only recently come to my attention that this salad, that I have eaten for my entire life, is something more than just "Mom's salad."
One of the great things about my family is that we have an open door policy. I have always been encouraged to invite friends over for meals; the more the merrier! Because of this, my friends have become quite familiar with my Mom's salad and pretty much demand that it be a signature dish whenever we sit down to eat together.
Over the past few years I have taken it upon myself to try and perfect this salad. However simple it may be, Mom just has that special touch.
Ingredients (all organic if possible):
2 Heads of Romaine Lettuce
4 Persian Cucumbers
1/2 of a Red Onion
Salt and Pepper to taste
Olive Oil and Balsamic to taste OR Olive Oil and 2 Lemons (we switch between both dressings)
On this occasion we added a few extras into the mix:
4 Tablespoons Corn
2-3 Tablespoons Pomegranate Seeds
Toss and Enjoy!
