Tuesdays happen to be one of my favorite days of the week. Some of my best girls come over to watch our favorite TV show and we cook up a healthy dinner. This week, I decided to switch it up and host a potluck salad night. With the heat wave that has been making its way through LA (and my house reaching over 85 degrees indoors thanks to our lack of AC), nothing sounded as good as sharing a few fun and healthy salad dishes and sides. Living in as little clothing as socially acceptable and drinking liters of water daily, I still do not have the desire to be in the kitchen for any extended period of time, but I also don't want to be eating out for every meal. Our salad potluck was the perfect compromise!
I love a good greek salad and recently I have been experimenting with different recipes. I decided to whip up a Greek Chopped Salad for my girls, check out the recipe below!
Greek Chopped Salad
1 Cucumber, chopped. 4 Tomatoes, chopped. 1 Red bell pepper, chopped. 1 red onion, chopped. 1 can garbanzo beans, rinsed and drained. 1 can black olive halves.
Drizzle with olive oil, the juice of 1 lemon, salt and pepper, fat free feta crumbles and banana peppers...toss and enjoy!
