These past few weeks of October have flown by! I feel as though my birthday came and went with the blink of an eye. But, boy, did I enjoy myself!
As you all know I am a firm believer in treating myself. Not on the daily, but, when the time comes, I let myself indulge. Indulge is exactly what I allowed myself to do while celebrating my 30th in Joshua Tree this past weekend. But, all good things come to an end, and first thing Monday morning I was back in the gym with my trainer burning off all that cake.
It's not always the easiest to transition back into clean eating after a weekend filled with delicious treats, but it has to be done. One of my favorite dishes to make has to be Spaghetti Squash with Meat Sauce. It is extremely filling, protein packed, and deliciously guilt free... even with a sprinkle or two of Parmesan on top!
Cut Spaghetti Squash in half (length wise,) take a spoon & scrape out the seeds, and place cut side down, on a pan or cookie sheet.
Bake for 30-40 mins (for a small/medium squash, usually serving 3-4 people) at 350.
About 20 minutes in, take your favorite ground beef/turkey/chicken and begin to cook it on the stove top. I prefer Trader Joe's organic ground beef (alloting about 4oz per person.)
When your meat is fully cooked, mix in your desired tomato sauce until fully heated.
Take out your squash and let it cool for a few minutes before scraping out the meat with a fork. (You may want to hold the squash halves with a potholder - it'll be hot!)
Serve up your desired portion of spaghetti squash and top it with your meat/sauce mixture.
Salt and pepper to taste...and of course top it all off with a generous pinch or two of Parmesan cheese.
