Nothing makes me happier than having a girls night in at my house. Whether that involves movies and pj's, ordering in, or cooking dinner all together... nothing beats the company of your closest friends in your home.
This week I was lucky enough to have a few girlfriends in from out of town and I, of course, took this opportunity to cook up a healthy and delicious meal for us all to enjoy.
Local & Organic Carrots.
Sabra Classic Hummus.
Organic Green Grapes.
Quinoa Greek Salad:
2 Cups Quinoa (I prefer Trader Joes frozen quinoa).
3 Organic Tomatoes, chopped.
1 Large Organic Cucumber, chopped.
2 Organic Avocados, chopped.
1/2 a lemon, drizzled on top.
Fat Free Feta Crumbles, to taste.
Lightly toss and enjoy!

I love searching for new healthy recipes that are the opposite of bland and boring. I happened to stumble upon this Stir Fry recipe on Pinterest. Click here for the recipe in full. I doubled it, for our group of 5 and everyone was shocked to hear that it was a GUILT FREE meal.
